The knife features a handle made from a combination of polypropylene and bamboo powder, giving it antibacterial properties. Kai's sashimi knife is particularly suitable for preparing, for example, sashimi or sliced raw fish, but it is also an excellent knife for cutting large pieces of meat and other similar moist foods.
